Ingredients
2 cups all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 1/2 cups milk
1/2 cup apple butter
1/4 cup melted unsalted butter
1 large egg
Instructions
Step 1: In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, cinnamon, ground ginger, salt, and nutmeg. Make sure these dry ingredients are well combined to ensure even distribution.
Step 2: In a separate, larger bowl, combine the milk, apple butter, melted butter, and egg. Whisk until the mixture is smooth and the apple butter is fully incorporated.
Step 3: Gently pour the wet ingredients into the dry mixture. Stir slowly until just combined. A few lumps are perfectly fine and even desirable – overmixing will lead to tough, dense pancakes.
Step 4: Heat a non-stick skillet or electric griddle to medium-high heat, or approximately 325°F (165°C). Lightly grease the surface to prevent sticking and promote even golden-brown cooking.
Step 5: Pour about 1/4 cup of batter per pancake onto the heated surface. Cook for 3-5 minutes on each side, or until they are beautifully golden brown and small bubbles begin to form on the surface.
Step 6: Transfer the cooked pancakes to a plate and serve immediately with your preferred toppings, such as additional apple butter, maple syrup, or a sprinkle of toasted pecans.
Notes
For extra warmth, a pinch of allspice or ground cloves can be added to the dry ingredients. Don't be afraid of a few lumps in the batter – it's key for a tender crumb!
