Ingredients
2 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1 cup full-fat canned coconut milk
1 teaspoon coconut extract
4 large egg whites
8 oz cream cheese, softened (frosting)
1/2 cup butter, softened (frosting)
4 cups powdered sugar (frosting)
2 cups sweetened shredded coconut

Instructions
Step 1: Preheat oven to 350°F and grease a 9x13 inch baking pan.
Step 2: Whisk together flour, baking powder, and salt in a bowl.
Step 3: Cream butter and sugar until light and fluffy, about 3-5 minutes.
Step 4: Add egg whites one at a time, followed by coconut extract.
Step 5: Alternately add flour mixture and coconut milk, starting and ending with flour.
Step 6: Pour into pan and bake for 30-35 minutes until a toothpick comes out clean.
Step 7: Cool completely, frost with cream cheese icing, and decorate with coconut and bunny features.
