Ingredients
3 large egg whites, room temperature
1/2 teaspoon cream of tartar
1/2 cup small-curd cottage cheese
1/2 cup fresh blueberries, dried thoroughly
1 tablespoon keto sweetener (optional)
1/2 teaspoon vanilla extract
Instructions
Step 1: Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
Step 2: Blend the cottage cheese until completely smooth and free of lumps.
Step 3: Whip egg whites with cream of tartar until stiff, glossy peaks form.
Step 4: Mix the blended cottage cheese with sweetener and vanilla in a separate bowl.
Step 5: Gently fold the cottage cheese mixture into the egg whites using a spatula.
Step 6: Carefully fold in the blueberries without deflating the batter.
Step 7: Scoop into 6 rounds on the baking sheet and bake for 25-30 minutes until golden.
Notes
Ensure the bowl for whipping egg whites is completely grease-free for best results.
