An incredibly light, wonderfully fluffy, and protein-packed low-carb and gluten-free bread alternative made with cottage cheese.
Ingredients
1 cup cottage cheese (full-fat or low-fat)
3 large eggs
1/2 cup almond flour
1 teaspoon baking powder
1/4 teaspoon salt
Optional: 1/2 teaspoon garlic powder or dried Italian seasoning (for savory)
Optional: Pinch of cinnamon (for sweet)
Instructions
Step 1: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
Step 2: In a blender or food processor, combine the cottage cheese and eggs. Blend until the mixture is completely smooth and no lumps of cottage cheese remain. This is crucial for the fluffy texture!
Step 3: Add the almond flour, baking powder, and salt to the blender. If using, add any optional herbs, spices, or cinnamon. Blend again until all ingredients are well combined and the batter is airy and light.
Step 4: Pour or spoon the batter onto the prepared baking sheet. You can make individual rounds (about 3-4 inches wide) or spread it into a rectangular shape for a loaf-like bread. Aim for an even thickness, about 1/4 to 1/2 inch.
Step 5: Bake for 25-30 minutes, or until the cloud bread is golden brown and feels firm to the touch. It should puff up significantly.
Step 6: Remove from the oven and let it cool completely on the baking sheet before peeling off the parchment paper and serving. Cooling helps the bread set its structure and prevents it from being too delicate.
Notes
For an extra savory touch, sprinkle some Everything Bagel seasoning on top before baking. If you prefer a sweeter version, add a touch of vanilla extract and a sugar substitute to the batter, then sprinkle with cinnamon sugar after baking.
