A light, airy, high-protein bread alternative made with eggs and cottage cheese, perfect for keto and low-carb diets.
Ingredients
3 large eggs, separated
1/2 cup small curd cottage cheese
1/4 tsp cream of tartar
1/8 tsp sea salt
Optional: 1 tsp honey or keto sweetener
Instructions
Step 1: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
Step 2: In a medium bowl, blend the egg yolks, cottage cheese, and salt until the mixture is completely smooth.
Step 3: In a separate large, clean bowl, whip the egg whites and cream of tartar with an electric mixer until stiff peaks form.
Step 4: Very gently fold the cottage cheese mixture into the whipped egg whites using a rubber spatula, taking care not to deflate the air.
Step 5: Dollop the mixture into 8 even circles on the baking sheet and bake for 25-30 minutes until golden.
Step 6: Let the bread cool completely on the pan before peeling from the parchment paper.
Notes
Make sure your mixing bowl for egg whites is completely grease-free, or they will not whip properly.
