Ingredients
1 1/2 cups all-purpose flour
2 tablespoons granulated sugar
2 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups buttermilk
1 large egg
3 tablespoons unsalted butter, melted and cooled
1 teaspoon vanilla extract
1-2 teaspoons red gel food coloring
Optional: Cream cheese glaze for topping
Instructions
Step 1: In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Step 2: In a separate bowl, whisk the egg, buttermilk, melted butter, vanilla, and red food coloring until smooth.
Step 3: Pour the wet ingredients into the dry ingredients and fold gently until just combined. Let the batter rest for 5 minutes.
Step 4: Heat a non-stick griddle over medium-low heat and lightly grease with butter.
Step 5: Pour 1/4 cup of batter for each pancake onto the griddle. Cook until bubbles appear on top.
Step 6: Flip the pancakes carefully and cook for an additional 1-2 minutes until the center is set.
Step 7: Serve warm with cream cheese glaze or maple syrup.

For the fluffiest results, ensure your buttermilk and egg are at room temperature before mixing.
