Description

A sophisticated and french cheesecake easy elegant airy dessert that combines a cloud-like texture with a rich, tangy flavor profile.

Ingredients

Scale

500g Full-fat Cream Cheese, room temperature
200g Greek Yogurt, room temperature
150g Granulated Sugar, divided
4 Large Eggs, separated
1 tsp Vanilla Extract
1 tbsp Fresh Lemon Zest
2 tbsp Cornstarch
1/4 tsp Salt

Instructions

Step 1: Preheat your oven to 300°F (150°C) and grease a 9-inch springform pan. Line the bottom with parchment paper for easy removal of your french cheesecake easy elegant airy.
Step 2: In a large bowl, beat the cream cheese and 100g of sugar until smooth and creamy. Mix in the egg yolks one at a time, followed by the Greek yogurt, vanilla extract, lemon zest, and cornstarch.
Step 3: In a separate clean bowl, whisk the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining 50g of sugar and continue whisking until stiff, glossy peaks form.
Step 4: Gently fold one-third of the egg whites into the cream cheese mixture to lighten it. Then, carefully fold in the remaining whites until no streaks remain, keeping the french cheesecake easy elegant airy batter as light as possible.
Step 5: Pour the batter into the prepared pan and smooth the top. Bake for 50-55 minutes until the edges are set but the center still has a slight wobble.
Step 6: Turn off the oven and prop the door open with a wooden spoon. Let the french cheesecake easy elegant airy cool inside for 1 hour before transferring to a wire rack to cool completely.
Step 7: Refrigerate for at least 4 hours, preferably overnight, before serving your elegant and airy creation.

Notes

Ensure the egg whites are whipped to stiff peaks but not over-beaten, as this is the key to the airy texture.
