A viral deli-inspired pasta salad featuring cheese tortellini, Italian meats, and a zesty creamy dressing.
Ingredients
20 oz Fresh cheese tortellini
4 oz Genoa salami, chopped
4 oz Pepperoni, chopped
6 oz Provolone cheese, cubed
1/2 cup Red onion, finely diced
1 cup Iceberg lettuce, finely shredded
1/2 cup Pickled banana peppers, sliced
1/2 cup Cherry tomatoes, halved
1/2 cup Mayonnaise
2 tbsp Red wine vinegar
1 tsp Dried oregano
1/2 tsp Garlic powder
1/2 tsp Red pepper flakes
Salt and black pepper to taste
Instructions
Step 1: Boil the cheese tortellini in salted water until al dente, then drain and rinse with cold water.
Step 2: In a small bowl, whisk mayonnaise, vinegar, oregano, garlic powder, and red pepper flakes into a smooth dressing.
Step 3: In a large bowl, combine the tortellini, salami, pepperoni, provolone, red onion, banana peppers, and tomatoes.
Step 4: Pour the dressing over the salad and toss until well combined.
Step 5: Fold in the shredded iceberg lettuce right before serving to maintain its crisp texture.
Notes
Ensure the pasta is completely cool before adding the dressing to prevent the mayo from separating.
