Ingredients
1 bag (approx. 9-10 oz) Nacho Cheese Doritos
12-16 pre-packaged cheddar cheese sticks (or low-moisture mozzarella/cheddar, cut into sticks)
½ cup all-purpose flour
2 large eggs, beaten
Vegetable oil, for frying
Instructions
Step 1: Prepare your Doritos crumbs. Place the Nacho Cheese Doritos into a food processor and pulse until they form fine, even crumbs. Alternatively, place them in a sturdy plastic bag and crush with a rolling pin. Transfer to a shallow dish.
Step 2: Set up your breading station. In a separate shallow dish, place the all-purpose flour. In another shallow dish, add the beaten eggs.
Step 3: Ensure your cheese sticks are very cold. If not, place them in the freezer for 10-15 minutes.
Step 4: Bread the cheese sticks. Take one cheese stick, dredge it thoroughly in the flour, shaking off any excess. Dip it into the beaten egg, ensuring it's fully coated. Finally, roll it generously in the Doritos crumbs, pressing gently to make sure the crumbs adhere well. Repeat with all cheese sticks.
Step 5: For extra crispiness and to prevent leakage, you can place the breaded cheese sticks back into the freezer for another 15-20 minutes while you prepare the oil.
Step 6: Heat the oil. Pour vegetable oil into a deep pan or Dutch oven, ensuring it's about 2-3 inches deep. Heat the oil over medium-high heat until it reaches 350-375°F (175-190°C). Use a thermometer for accuracy.
Step 7: Fry the cheese sticks. Carefully place 3-4 breaded cheese sticks into the hot oil, ensuring not to overcrowd the pan. Fry for 1-2 minutes per side, or until golden brown and the cheese is visibly melted and gooey inside.
Step 8: Drain and serve. Using a slotted spoon or tongs, carefully remove the fried cheese sticks from the oil and place them on a wire rack lined with paper towels to drain any excess oil. Serve immediately with your favorite dipping sauces.
