Ingredients
1 lb Cremini or White Button mushrooms
1 cup all-purpose flour
2 tbsp cornstarch
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
1 cup buttermilk
2 large eggs
2 cups panko breadcrumbs
Oil for frying (vegetable or peanut oil)
Salt and pepper to taste
Instructions
Step 1: Clean the mushrooms thoroughly with a damp paper towel and trim any woody ends from the stems.
Step 2: Prepare three bowls: one with the flour, cornstarch, and spices; one with the whisked buttermilk and eggs; and one with the panko breadcrumbs.
Step 3: Dredge each mushroom in the flour mixture, shaking off any excess.
Step 4: Dip the floured mushroom into the wet buttermilk mixture, ensuring it is fully coated.
Step 5: Press the mushroom into the panko breadcrumbs until it is completely and evenly covered.
Step 6: Heat oil in a large pot to 375°F. Fry the mushrooms in small batches for 3-5 minutes until golden brown.
Step 7: Transfer to a wire rack to drain and season with a pinch of salt immediately.
Notes
For maximum crunch, use cold buttermilk and ensure the mushrooms are bone-dry before starting the breading process.
