Description
A high-protein, creamy frozen snack made with Greek yogurt and peanut butter, dipped in a crisp dark chocolate shell.
Ingredients
1 cup thick plain Greek yogurt
1/3 cup creamy peanut butter
2 tablespoons honey or maple syrup
1/2 teaspoon vanilla extract
1 1/4 cups dark chocolate chips
1 tablespoon coconut oil
2 tablespoons crushed peanuts
Instructions
Step 1: Whisk together Greek yogurt, peanut butter, honey, and vanilla extract until smooth.
Step 2: Spread the mixture into silicone molds or a lined loaf pan.
Step 3: Freeze for 3-4 hours until completely solid.
Step 4: Melt dark chocolate chips and coconut oil in the microwave in 30-second bursts.
Step 5: Dip the frozen bars into the chocolate coating and top with crushed peanuts.
Step 6: Place back in the freezer for 15 minutes to set the chocolate.
Notes
Use full-fat Greek yogurt for the creamiest texture. If the yogurt is too thin, strain it through cheesecloth for an hour first.
