Description
Tender, flaky cod fillets baked in a rich garlic butter sauce with fresh lemon and parsley, perfect for a quick and healthy weeknight meal.
Ingredients
4 cod fillets (about 6 oz each)
1/4 cup unsalted butter, melted
4 cloves garlic, minced
2 tablespoons fresh parsley, chopped (plus more for garnish)
1 tablespoon fresh lemon juice
1 teaspoon paprika
Salt to taste
Black pepper to taste
Lemon wedges, for serving
Instructions
Step 1: Preheat your oven to 400°F (200°C) and lightly grease a baking dish with cooking spray or a little olive oil.
Step 2: In a small bowl, combine the melted butter, minced garlic, chopped parsley, lemon juice, paprika, salt, and pepper. Mix well to combine.
Step 3: Arrange the cod fillets in the prepared baking dish in a single layer.
Step 4: Drizzle the garlic butter sauce evenly over the cod fillets, ensuring they are well coated.
Step 5: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cod is opaque and flakes easily with a fork. The cooking time may vary depending on the thickness of the fillets.
Step 6: Remove the cod from the oven and garnish with additional chopped parsley and lemon wedges. Serve immediately with your favorite sides.
Notes
Ensure cod fillets are roughly the same thickness for even cooking. Adjust baking time based on fillet thickness – thinner fillets will cook faster. For extra zest, add a teaspoon of lemon zest to the garlic butter mixture.
