Description
Tender chicken bites and crisp asparagus are sautéed in a rich garlic butter sauce, brightened with lemon, for a quick and flavorful weeknight meal.
Ingredients
1 pound chicken breast, cut into bite-sized pieces
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
Salt and pepper to taste
1 teaspoon paprika (optional)
1 bunch asparagus, trimmed and cut into 2-inch pieces
Juice of 1 lemon
Zest of 1 lemon
Fresh parsley, chopped (for garnish)
Instructions
Step 1: Season the chicken pieces with salt, pepper, and paprika (if using) in a bowl. Make sure they are evenly coated.
Step 2: Heat the olive oil in a large skillet over medium-high heat.
Step 3: Add the chicken bites to the skillet in a single layer. Cook for about 6-8 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
Step 4: In the same skillet, reduce the heat to medium. Add the butter and let it melt, then add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
Step 5: Add the asparagus to the skillet and toss to coat in the garlic butter. Sauté for about 3-4 minutes until the asparagus is tender but still crisp.
Step 6: Return the chicken to the skillet, along with the lemon juice and zest. Toss everything together to combine and heat through for another 1-2 minutes.
Step 7: Serve hot, garnished with fresh parsley. Enjoy your Garlic Butter Chicken with a side salad or cauliflower rice for a complete meal!
Notes
For best results, do not overcrowd the skillet when cooking the chicken; cook in batches if necessary. Adjust seasoning to your preference.
