A quick and easy one-pan meal featuring succulent chicken bites in a rich garlic butter sauce, perfectly paired with bright, zesty lemon asparagus.
Ingredients
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
4 tablespoons unsalted butter, divided
5 cloves garlic, minced
1 teaspoon dried thyme (or 1 tablespoon fresh thyme, finely chopped)
Salt and freshly ground black pepper, to taste
1 tablespoon fresh lemon juice
Fresh parsley, chopped, for garnish
1 bunch asparagus, trimmed
1 tablespoon olive oil
Zest of 1 lemon
Instructions
Step 1: Preheat your oven to 400°F (200°C).
Step 2: On a baking sheet, toss the trimmed asparagus spears with olive oil, a sprinkle of salt, pepper, and the bright zest of one lemon. Spread them out in a single layer so they can roast evenly.
Step 3: Pop the baking sheet into your preheated oven and roast for approximately 10-12 minutes, or until tender with a slight crispness.
Step 4: While your asparagus is roasting, heat 2 tablespoons of unsalted butter in a large skillet over medium-high heat. Add your bite-sized chicken pieces, seasoning them with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until they’re beautifully browned and cooked all the way through.
Step 5: Reduce the heat to medium. Add the remaining 2 tablespoons of butter, the minced garlic, and the dried thyme to the skillet. Sauté for another 2-3 minutes, stirring constantly, until the garlic is wonderfully fragrant but takes care not to burn it.
Step 6: Stir in the fresh lemon juice, mixing it thoroughly with the chicken and garlic butter sauce. Remove the skillet from the heat immediately.
Step 7: Plate your delicious garlic butter chicken bites alongside the roasted lemon asparagus. For a vibrant finish, garnish with freshly chopped parsley.
Notes
Ensure chicken pieces are uniform in size for even cooking. For extra flavor, you can marinate the chicken in a little lemon juice and a pinch of garlic powder for 15 minutes before cooking.
