Description

Tender, flaky cod strips pan-seared in rich garlic butter and served with a vibrant, zesty sweet chili lime dipping sauce.

1.5 lbs cod fillets, cut into 1-inch strips
2 tablespoons unsalted butter
2 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped (for garnish)
1/4 cup sweet chili sauce
2 tablespoons fresh lime juice
1 tablespoon soy sauce (or tamari for gluten-free)
1 teaspoon grated fresh ginger
1 small garlic clove, minced
1 teaspoon sesame oil
Pinch of red pepper flakes (optional)


Instructions

Step 1: Prepare the cod. Pat cod strips thoroughly dry with paper towels. Season with salt and pepper.
Step 2: Make the sweet chili lime sauce. In a small bowl, whisk together sweet chili sauce, lime juice, soy sauce, grated ginger, minced garlic, sesame oil, and red pepper flakes (if using). Set aside.
Step 3: Cook the cod. Heat olive oil and butter in a large non-stick skillet over medium-high heat until the butter is melted and sizzling. Add minced garlic and cook for 30 seconds until fragrant.
Step 4: Sear the cod. Add cod strips to the skillet in a single layer, being careful not to overcrowd the pan. Cook for 2-3 minutes per side, until golden brown and cooked through (the cod should flake easily with a fork). You may need to cook in batches.
Step 5: Serve. Remove cod from the skillet and transfer to a serving platter. Garnish with fresh chopped parsley. Serve immediately with the sweet chili lime sauce for dipping.

Notes

For extra crispiness, ensure the cod is very dry before cooking. Adjust the spice level of the sauce by adding more or less red pepper flakes. Leftovers can be stored in the refrigerator for up to 2 days.
