Description
A next-level grilled cheese sandwich with golden, crispy bread infused with garlic butter and a gooey blend of mozzarella and cheddar cheese — perfect comfort food for any time of day.

- 8 slices of bread (French or sourdough recommended)
- 2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- ½ cup unsalted butter, softened
- 3 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- ½ teaspoon salt
- Optional: pinch of red pepper flakes
Instructions
- In a small bowl, mix softened butter, minced garlic, chopped parsley, salt, and red pepper flakes (if using) to make garlic butter.
- Spread garlic butter generously on one side of each bread slice.
- Flip four slices so buttered side faces down; pile shredded mozzarella and cheddar cheese on top.
- Top with remaining bread slices, buttered side out; press lightly to assemble sandwiches.
- Preheat skillet or griddle over medium heat.
- Place sandwiches buttered side down in skillet; cook 3–4 minutes per side, pressing gently with spatula, until bread is golden and cheese melted.
- Remove from skillet; let rest 1 minute before slicing and serving warm.
Notes
For best results, keep heat medium to avoid burning bread before cheese melts. Reheat leftovers in skillet to maintain crispness. Garlic butter can be made ahead and stored refrigerated.
