Garlic Mozzarella Chicken Bomb Skewers

Description

Juicy chicken pieces wrapped around mozzarella, bathed in a vibrant garlic herb marinade, and grilled to golden perfection.


Ingredients

1.5 lbs boneless, skinless chicken breasts, cut into 1.5-inch cubes
8 oz fresh mozzarella cheese, cut into 1/2-inch cubes
1/4 cup olive oil
4 cloves garlic, minced
2 tbsp fresh parsley, chopped
1 tbsp lemon juice
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
Wooden or metal skewers (if wooden, soak for 30 mins)


Instructions

Step 1: In a medium bowl, combine olive oil, minced garlic, chopped parsley, lemon juice, oregano, salt, and pepper. Whisk well to create the marinade.
Step 2: Add the cubed chicken to the marinade, tossing to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
Step 3: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
Step 4: Thread the marinated chicken and mozzarella cubes alternately onto the skewers, starting and ending with chicken. Don't pack them too tightly to ensure even cooking.
Step 5: Preheat your grill to medium-high heat (about 400°F / 200°C). Lightly oil the grill grates to prevent sticking.
Step 6: Place the skewers on the preheated grill. Cook for 15-20 minutes, turning every 4-5 minutes, until the chicken is cooked through (internal temperature of 165°F / 74°C) and the mozzarella is melted and slightly golden.
Step 7: Remove from grill and let rest for a few minutes before serving. Garnish with extra fresh parsley if desired.

Notes

For an extra kick, add a pinch of red pepper flakes to the marinade. You can also add cherry tomatoes or bell pepper chunks to the skewers for added color and flavor. Ensure chicken is fully thawed before marinating.
