Description
A juicy and flaky halibut fillet topped with a decadent roasted garlic and parmesan crust, baked to perfection in just 20 minutes.
Ingredients
1/2 tbsp olive oil
1 head garlic
kosher salt to taste
1 tbsp unsalted butter (Kerrygold unsalted butter)
freshly ground black pepper
1 lb halibut fillets (about 1-inch thick)
1/2 cup mayonnaise (Hellmann’s mayonnaise)
1/2 cup grated parmesan cheese
6 roasted garlic cloves (mashed into a paste)
Instructions
Step 1: Preheat oven to 400°F (200°C) and grease a baking dish with the melted unsalted butter.
Step 2: Roast the garlic head by drizzling with olive oil and wrapping in foil; bake for 40 minutes (can be done in advance).
Step 3: Pat the halibut fillets dry with a paper towel and season with salt and pepper.
Step 4: In a small bowl, mix the mayonnaise, parmesan cheese, and 6 mashed roasted garlic cloves.
Step 5: Place halibut in the baking dish and spread the garlic parmesan mixture over the top of each fillet.
Step 6: Bake for 12-15 minutes or until the fish reaches an internal temperature of 145°F and flakes easily.
Step 7: Optional: Broil for 1-2 minutes for a darker, crispier crust.
Notes
Ensure you use fresh parmesan cheese for the best melting results. If you don't have time to roast garlic, you can use 2 cloves of fresh minced garlic, though the flavor will be sharper.
