Instructions
Step 1: Preheat oven to 350°F and line two baking sheets with parchment paper.
Step 2: Cream butter and brown sugar together; beat in the vegetable oil, egg, and vanilla.
Step 3: Whisk the dry ingredients together and slowly incorporate them into the wet mixture until a soft dough forms.
Step 4: In a separate bowl, mix the cold butter, brown sugar, flour, and cinnamon for the streusel until crumbly.
Step 5: Scoop dough into balls, press streusel into the tops, and bake for 10-12 minutes.
Step 6: Cool cookies, then whisk the icing ingredients and drizzle over the tops.
