Ingredients
1 ripe peach, pitted and sliced
1-inch piece fresh ginger, peeled and thinly sliced
10-12 fresh mint leaves
1 lime, cut into wedges
2 tablespoons simple syrup (or to taste)
1 cup sparkling water or club soda
Ice cubes
Garnish: extra peach slices, mint sprigs
Instructions
Step 1: In a sturdy glass or cocktail shaker, combine the peach slices, ginger slices, mint leaves, and two lime wedges.
Step 2: Gently muddle the ingredients together. You want to bruise the mint and ginger to release their flavors, and lightly crush the peaches and lime to extract their juices. Do not over-muddle the mint, or it will become bitter.
Step 3: Add the simple syrup and a generous amount of ice to the glass.
Step 4: Pour in the sparkling water or club soda.
Step 5: Stir gently to combine all ingredients.
Step 6: Taste and adjust sweetness or tartness if desired by adding more simple syrup or a squeeze of fresh lime juice.
Step 7: Garnish with fresh peach slices, a sprig of mint, and an extra lime wedge. Serve immediately and enjoy!
Notes
For a spicier kick, use more ginger or muddle it more aggressively. For a sweeter drink, increase the simple syrup. You can also make a large batch of the muddled peach-ginger-mint-lime base and store it in the fridge for up to 2 days, then just add sparkling water and ice when serving.
