Instructions

Step 1: Preheat your oven to 350°F (175°C). Grease and flour a standard loaf pan, or line with parchment paper.
Step 2: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground ginger, ground cinnamon, and salt until well combined.
Step 3: In a separate medium bowl, whisk together the softened unsalted butter, eggs, milk, vanilla extract, and molasses until smooth.
Step 4: Pour the wet ingredients into the dry ingredients. Mix with a spatula or spoon until just combined and no streaks of flour remain. Be careful not to overmix.
Step 5: Transfer the batter evenly into the prepared loaf pan. Bake for 45-50 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Step 6: While the loaf is cooling slightly, prepare the vanilla drizzle. In a small bowl, combine the powdered sugar, milk, and vanilla extract. Whisk until smooth and creamy.
Step 7: Once the loaf has cooled for about 10-15 minutes in the pan, carefully invert it onto a wire rack to cool completely. Once fully cooled, generously drizzle the vanilla glaze over the top.
Step 8: Garnish the loaf with chopped nuts and granola, if desired. Add fresh berries and a dusting of powdered sugar for an extra touch. Slice and serve immediately. Enjoy!
