Description
A moist and tender quick bread infused with warm cinnamon and mini chocolate chips, finished with a rich chocolate glaze.
Ingredients
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 Tablespoon cinnamon
1 1/2 cups mini chocolate chips
1/2 cup granulated sugar
1/2 cup light brown sugar
1 whole large egg
1/3 cup canola oil
3/4 cup buttermilk
2 teaspoons vanilla extract
4 oz semi-sweet chocolate chips (glaze)
2 Tablespoons butter (glaze)
2 Tablespoons powdered sugar (glaze)
1 Tablespoon milk (glaze)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
Step 2: In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Stir in the mini chocolate chips.
Step 3: In a larger bowl, whisk the egg, granulated sugar, and brown sugar until light and creamy.
Step 4: Add the canola oil, buttermilk, and vanilla to the egg mixture and whisk until well combined.
Step 5: Gently stir the dry ingredients into the wet ingredients until just combined; do not over-mix.
Step 6: Pour the batter into the loaf pan and bake for 50-60 minutes, or until a tester comes out clean.
Step 7: Cool in the pan for 10 minutes, then remove to a rack to cool completely before glazing.
Step 8: For the glaze, melt chocolate and butter in the microwave. Whisk in powdered sugar and milk until smooth, then drizzle over the bread.
Notes
Use high-quality Ceylon cinnamon for a more complex flavor. Store leftovers in a sealed container.
