Ingredients
1 lb large shrimp, peeled and deveined (tails on)
1/2 cup gluten-free all-purpose flour
1/4 cup cornstarch
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
2 large eggs, beaten
Vegetable or avocado oil for frying
Instructions
Step 1: Pat the shrimp thoroughly dry with paper towels and lightly season with a pinch of salt.
Step 2: Set up three shallow bowls: one with cornstarch, one with beaten eggs, and one with a mixture of gluten-free flour, garlic powder, onion powder, smoked paprika, salt, and pepper.
Step 3: Dredge each shrimp first in cornstarch, then dip into the egg wash, and finally coat thoroughly in the seasoned flour mixture.
Step 4: Heat 2 inches of oil in a heavy-bottomed skillet or Dutch oven to 350°F (175°C).
Step 5: Fry the shrimp in batches for 2-3 minutes until golden brown and crispy, being careful not to overcook.
Step 6: Remove shrimp with a slotted spoon and drain on a wire cooling rack to maintain maximum crispness.
Notes
Always use a thermometer to check your oil temperature; this is the most important factor for non-greasy fried food.
