Description

A moist, golden pudding packed with sweet apricots and topped with a sticky glaze and crunchy walnuts.


Ingredients

Scale

1 cup dried apricots, chopped and rehydrated
1/2 cup walnuts, roughly chopped
1 cup all-purpose flour
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 tsp baking powder
1/4 cup apricot jam (for glaze)
2 tbsp honey or maple syrup


Instructions

Step 1: Preheat your oven to 350°F (175°C) and grease an 8-inch square baking dish.
Step 2: Cream together the softened butter and sugar until the mixture is light and fluffy.
Step 3: Beat in the eggs one at a time, followed by the vanilla extract, ensuring the mixture is smooth.
Step 4: Sift the flour and baking powder together, then gently fold into the wet ingredients.
Step 5: Fold in the chopped apricots and half of the walnuts until evenly distributed.
Step 6: Spread the batter into the prepared dish and sprinkle the remaining walnuts on top.
Step 7: Bake for 40-45 minutes or until a skewer inserted into the center comes out clean.
Step 8: While baking, warm the apricot jam and honey in a small pan to create the sticky glaze.
Step 9: Pour the warm glaze over the pudding immediately after removing it from the oven.

Notes

For extra moisture, soak your apricots in orange liqueur instead of juice.
