Ingredients
1 store-bought pie crust (9-inch), or homemade
1/2 cup (1 stick) unsalted butter, melted
1 cup granulated sugar
3 large eggs
1 tsp vanilla extract
1/2 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/4 tsp salt
1/2 cup chocolate chips (optional, for extra gooeyness)
Instructions
Step 1: Preheat your oven to 350°F (175°C). Place the pie crust into a 9-inch pie dish. If using a homemade crust, blind bake according to your recipe's instructions and let it cool slightly.
Step 2: In a large bowl, whisk together the melted butter and granulated sugar until well combined.
Step 3: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Step 4: In a separate small bowl, whisk together the all-purpose flour, cocoa powder, and salt.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. If using, fold in the chocolate chips.
Step 6: Pour the brownie batter into the prepared pie crust, spreading it evenly.
Step 7: Bake for 30-35 minutes, or until the edges are set and a toothpick inserted into the center comes out with moist crumbs (not wet batter). The center should still be slightly wobbly.
Step 8: Remove from the oven and let the pie cool completely on a wire rack before slicing and serving. This allows the brownie to set and achieve its ultimate gooey texture.
Notes
For an extra indulgent treat, warm individual slices briefly in the microwave before serving with ice cream. You can also sprinkle a pinch of flaky sea salt over the top before baking for a delicious sweet and salty contrast.
