Ingredients
2 cups whole milk
1/2 cup heavy cream
4 ounces high-quality bittersweet chocolate, finely chopped
2 tablespoons unsweetened cocoa powder
3 tablespoons granulated sugar
1 teaspoon pure vanilla extract
1 pinch sea salt
Instructions
Step 1: Whisk the cocoa powder and sugar in a small saucepan with 2 tablespoons of milk to form a smooth paste.
Step 2: Stir in the remaining milk and heavy cream, then set the saucepan over medium-low heat.
Step 3: Heat until steaming and just starting to bubble around the edges, whisking constantly to ensure the liquid is well combined.
Step 4: Add the chopped chocolate and sea salt; whisk until the chocolate is completely melted and the mixture is thick and gooey.
Step 5: Remove from heat, stir in the vanilla extract, and pour into warmed mugs.
Notes
Use a chocolate bar with at least 60% cacao for the best gooey results. Avoid using pre-packaged chocolate chips if possible.
