Description

Ingredients

  • 1 large egg
  • ½ cup milk
  • ⅓ cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • ¼ cup butter, melted (for topping)
  • ½ cup granulated sugar (for topping)
  • 1 tsp ground cinnamon (for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
  2. Whisk flour, sugar, baking powder, baking soda, salt, and nutmeg in a large bowl.
  3. Whisk egg, milk, oil (or butter), and vanilla in another bowl.
  4. Pour wet into dry ingredients and gently mix until just combined.
  5. Fill muffin cups about ¾ full with batter.
  6. Bake 15-18 minutes until a toothpick comes out clean.
  7. Melt butter for topping. Mix sugar and cinnamon in another bowl.
  8. Dip warm muffins in melted butter, then roll in cinnamon sugar mixture.

Notes
