- 1 large egg
- ½ cup milk
- ⅓ cup vegetable oil or melted butter
- 1 tsp vanilla extract
- ¼ cup butter, melted (for topping)
- ½ cup granulated sugar (for topping)
- 1 tsp ground cinnamon (for topping)
Instructions
- Preheat oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
- Whisk flour, sugar, baking powder, baking soda, salt, and nutmeg in a large bowl.
- Whisk egg, milk, oil (or butter), and vanilla in another bowl.
- Pour wet into dry ingredients and gently mix until just combined.
- Fill muffin cups about ¾ full with batter.
- Bake 15-18 minutes until a toothpick comes out clean.
- Melt butter for topping. Mix sugar and cinnamon in another bowl.
- Dip warm muffins in melted butter, then roll in cinnamon sugar mixture.
