Description

These delightful muffins combine the soft texture of a muffin with the sweet, spiced coating of a classic donut, making for a perfect nostalgic treat for breakfast or snack time.


Ingredients

1 ½ cups all-purpose flour
½ cup granulated sugar
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
¼ tsp ground nutmeg (optional)
1 large egg
½ cup milk
â…“ cup vegetable oil (or melted butter)
1 tsp vanilla extract
¼ cup butter, melted (for topping)
½ cup granulated sugar (for topping)
1 tsp ground cinnamon (for topping)


Instructions

Step 1: Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin with muffin liners.
Step 2: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and nutmeg (if using) until well combined.
Step 3: In another bowl, whisk together the egg, milk, vegetable oil (or melted butter), and vanilla extract until smooth.
Step 4: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; a few lumps are okay!
Step 5: Spoon the batter into the prepared muffin tin, filling each cup about ¾ full to allow room for rising.
Step 6: Bake in the preheated oven for about 15-18 minutes, or until a toothpick inserted into the center comes out clean.
Step 7: While the muffins are baking, melt the butter for the topping in a small bowl. In another bowl, mix together the granulated sugar and ground cinnamon.
Step 8: Once the muffins are done, remove them from the oven and let them cool for a few minutes. While they are still warm, dip the tops in the melted butter, then roll them in the cinnamon sugar mixture until fully coated.

Notes

For best results, ensure your wet ingredients are at room temperature before mixing. Avoid overmixing the batter for a tender crumb. These muffins are best enjoyed warm!
