These easy, no-bake pecan pie balls capture all the classic flavors of a traditional pecan pie in a convenient, bite-sized holiday treat.
Ingredients
2 cups (approx. 5 oz or 1 box) finely crushed vanilla wafers
1 cup finely chopped pecans
1 cup powdered sugar, plus more for rolling
1/2 cup (1 stick) unsalted butter, melted
1/4 cup light corn syrup
1 teaspoon vanilla extract
Instructions
Step 1: In a large bowl, combine the finely crushed vanilla wafers, finely chopped pecans, and 1 cup of powdered sugar. Mix well to ensure all ingredients are evenly distributed.
Step 2: In a separate small microwave-safe bowl, melt the unsalted butter. Once melted, stir in the light corn syrup and vanilla extract.
Step 3: Pour the wet ingredients into the dry ingredients. Mix thoroughly with a spoon or your hands until a cohesive, dough-like mixture forms. The mixture should be sticky but hold together.
Step 4: If the mixture is too soft to roll, cover the bowl and refrigerate for 15-20 minutes to firm it up slightly.
Step 5: Place extra powdered sugar in a shallow dish for coating. Roll the mixture into 1-inch balls. Immediately roll each ball in the powdered sugar, ensuring it's fully coated.
Step 6: Arrange the coated pecan pie balls on a plate or baking sheet. Refrigerate for at least 2 hours to allow them to firm up completely before serving.
Notes
For an extra layer of flavor, lightly toast the pecans before chopping. Ensure vanilla wafers are crushed very finely for the best texture. These make excellent edible gifts!
