4 boneless, skinless chicken breasts
2 tbsp olive oil (for chicken)

1 tsp dried oregano
2 cups diced tomatoes (Roma or cherry)
1/4 cup chopped fresh basil (for topping)
2 cloves garlic, minced (for topping)
2 tbsp balsamic vinegar
1 tbsp olive oil (for topping)
1/2 tsp salt (for topping)
1/4 tsp black pepper (for topping)
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
Fresh basil leaves (optional, for garnish)
Balsamic glaze (optional, for drizzling)


Instructions

Step 1: Preheat your grill to medium-high heat.
Step 2: Rub the chicken breasts with 2 tablespoons of olive oil. Season generously with 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of garlic powder, and 1 teaspoon of dried oregano.
Step 3: Grill the seasoned chicken breasts for 6-7 minutes on each side, or until cooked through to an internal temperature of 165°F (74°C).
Step 4: While the chicken grills, prepare the Margherita topping. In a bowl, combine 2 cups diced tomatoes, 1/4 cup chopped fresh basil, 2 cloves minced garlic, 2 tablespoons balsamic vinegar, 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well.
Step 5: Transfer cooked chicken to a serving platter. Evenly spoon the fresh Margherita topping over each breast.
Step 6: Garnish with 1/4 cup grated Parmesan cheese, 1/4 cup chopped fresh parsley, and optionally fresh basil leaves and a drizzle of balsamic glaze. Serve immediately.
Step 7: For optimal flavor, let the chicken rest for 5 minutes after grilling before adding the topping.
