- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp dried oregano
- 2 cups diced tomatoes
- 1/4 cup chopped fresh basil
- 2 cloves garlic, minced
- 2 tbsp balsamic vinegar
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Fresh basil leaves (optional)
- Balsamic glaze (optional)
Instructions
- Preheat the grill to medium-high heat.
- Rub the chicken breasts with olive oil, salt, black pepper, garlic powder, and dried oregano.
- Grill the chicken for 6-7 minutes on each side, or until cooked through and internal temperature reaches 165°F (74°C).
- In a bowl, combine diced tomatoes, chopped fresh basil, minced garlic, balsamic vinegar, olive oil, salt, and black pepper. Mix well.
- Top the grilled chicken with the Margherita topping.
- Garnish with grated Parmesan cheese, chopped fresh parsley, fresh basil leaves, and balsamic glaze if desired.
