  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 2 cups diced tomatoes
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic, minced
  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Fresh basil leaves (optional)
  • Balsamic glaze (optional)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Rub the chicken breasts with olive oil, salt, black pepper, garlic powder, and dried oregano.
  3. Grill the chicken for 6-7 minutes on each side, or until cooked through and internal temperature reaches 165°F (74°C).
  4. In a bowl, combine diced tomatoes, chopped fresh basil, minced garlic, balsamic vinegar, olive oil, salt, and black pepper. Mix well.
  5. Top the grilled chicken with the Margherita topping.
