- Boneless, Skinless Chicken Breasts
- Olive Oil
- Fresh Lemon Juice
- Lemon Zest
- Garlic (pressed)
- Oregano
- Salt
- Black Pepper
- Fresh Parsley or Cilantro (for garnish)
- Lemon Wedges (for serving)
Instructions
- In a bowl, combine olive oil, lemon juice, lemon zest, garlic, oregano, salt, and black pepper to make the marinade.
- Pat chicken breasts dry and pound to even thickness if needed.
- Place chicken in a resealable bag or bowl and pour marinade over; toss to coat.
- Marinate for at least 30 minutes, up to 6 hours.
- Preheat grill or grill pan to medium-high heat.
- Grill chicken about 5-7 minutes per side until internal temperature reaches 160°F (white meat).
- Remove chicken and let rest for 5 minutes.
- Garnish with fresh parsley or cilantro and serve with lemon wedges.
Notes
Avoid marinating longer than 6 hours to prevent toughness. Use a meat thermometer for perfect doneness. Let chicken rest after grilling to retain juices. For juicier meat, substitute chicken thighs. Grill pan can be used indoors.
