- 1 tsp onion powder
- 1 ripe avocado, peeled and pitted
- 1/4 cup fresh cilantro
- 2 cloves garlic
- 2 tbsp lime juice
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- Lime wedges (optional)
- Fresh cilantro leaves (optional)
Instructions
- Preheat the grill to high heat.
- Rub the skirt steak with olive oil, salt, black pepper, garlic powder, and onion powder.
- Grill the steak for 4-5 minutes on each side, or until cooked to your desired doneness.
- In a food processor, combine avocado, fresh cilantro, garlic, lime juice, olive oil, salt, and black pepper. Pulse until smooth and creamy.
- Slice the grilled steak and drizzle with the avocado chimichurri.
- Garnish with crumbled feta cheese, chopped fresh parsley, lime wedges, and fresh cilantro leaves if desired.
