Ingredients
1 lb ground turkey (93% lean)
2 medium zucchinis, diced into 1/2 inch cubes
1 medium yellow onion, finely diced
3 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/2 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
Fresh parsley for garnish
1/4 cup grated Parmesan cheese (optional)
Instructions
Step 1: Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 3-4 minutes until softened and translucent.
Step 2: Add the ground turkey to the skillet. Use a wooden spoon to break the meat into small crumbles. Cook for 5-7 minutes until the turkey is browned and no longer pink.
Step 3: Stir in the minced garlic, dried oregano, smoked paprika, red pepper flakes, salt, and black pepper. Cook for another 1 minute until the garlic is fragrant.
Step 4: Add the diced zucchini to the skillet. Stir well to combine with the turkey and spices.
Step 5: Cook for 5-6 minutes, stirring occasionally, until the zucchini is tender-crisp but not mushy. Do not overcook.
Step 6: Remove from heat. Taste and adjust seasoning if necessary. Garnish with fresh parsley and Parmesan cheese if desired before serving.
Notes
To avoid mushy zucchini, ensure the pan is hot before adding them and don't cover the pan with a lid, as this traps steam.
