Description

An authentic island-style grilled chicken featuring a sweet and savory pineapple ginger glaze.


Ingredients

Scale

2.5 lbs chicken thighs, bone-in skin-on
1 cup unsweetened pineapple juice
1/2 cup soy sauce
1/2 cup dark brown sugar
1/4 cup ketchup
1 tablespoon fresh ginger, grated
4 cloves garlic, minced
1 tablespoon rice vinegar


Instructions

Step 1: Combine pineapple juice, soy sauce, sugar, ketchup, ginger, garlic, and vinegar in a bowl.
Step 2: Reserve 1/2 cup of the sauce for basting.
Step 3: Marinate chicken in the remaining sauce for 4-12 hours in the refrigerator.
Step 4: Preheat grill to medium-high heat and oil the grates.
Step 5: Grill chicken for 20-25 minutes, turning every 5 minutes.
Step 6: Baste generously with the reserved sauce during every turn (huli).
Step 7: Cook until internal temperature reaches 165°F.
Step 8: Rest for 5 minutes before serving.

Notes

For best results, use a charcoal grill to get that authentic smoky island flavor.
