A high-protein, frozen treat featuring chocolate oat cookies and a creamy peanut butter Greek yogurt filling with fudge centers.
Ingredients
1 cup oat flour
1/4 cup unsweetened cocoa powder
1/4 cup peanut butter
2 tablespoons honey or maple syrup
2-3 tablespoons milk of choice
1/2 cup plain Greek yogurt
2 tablespoons peanut butter
1 tablespoon honey
1/4 cup dark chocolate, melted
Instructions
Step 1: Mix the oat flour, cocoa powder, 1/4 cup peanut butter, 2 tbsp honey, and milk until a dough forms.
Step 2: Press half the dough into a parchment-lined pan.
Step 3: Whisk the Greek yogurt, 2 tbsp peanut butter, and 1 tbsp honey until smooth.
Step 4: Swirl the melted dark chocolate into the yogurt mixture.
Step 5: Spread the yogurt mixture over the cookie base.
Step 6: Top with the remaining cookie dough, pressing down firmly.
Step 7: Freeze for 4 hours then slice into squares.
Notes
For a vegan version, use a plant-based yogurt thickener and maple syrup. Ensure the cookies are soft by not over-mixing.
