Healthy Cottage Cheese Carrot Cake Bars

Description

A healthy and moist treat, these cottage cheese carrot cake bars offer all the flavor of traditional carrot cake with a wholesome twist, packed with protein and natural sweetness.


Ingredients

1 cup cottage cheese
2 large eggs
½ cup almond flour (or oat flour for a heartier texture)
1–2 tbsp maple syrup or honey (optional for added sweetness)
1 tsp vanilla extract
1 tsp cinnamon
½ tsp nutmeg (optional)
½ tsp baking powder
Pinch of salt
1 cup grated carrots
¼ cup chopped walnuts or pecans (optional)


Instructions

Step 1: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
Step 2: In a large bowl, or using a blender/food processor, combine the cottage cheese, eggs, maple syrup/honey (if using), and vanilla extract. Blend until smooth and no visible cottage cheese lumps remain.
Step 3: In a separate medium bowl, whisk together the almond flour (or oat flour), cinnamon, nutmeg (if using), baking powder, and salt.
Step 4: Add the wet ingredients to the dry ingredients and mix until just combined. Gently fold in the grated carrots and chopped walnuts/pecans (if using). Do not overmix.
Step 5: Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Step 6: Let the bars cool completely in the pan on a wire rack before lifting out with the parchment paper and slicing into squares. Enjoy!

Notes

For an extra touch, you can drizzle a light cream cheese glaze made with Greek yogurt and a touch of maple syrup over the cooled bars. You can also add ¼ cup of raisins or shredded coconut along with the carrots for more texture and flavor.
