Description

Ingredients

1 cup cooked rice (white, brown, or cauliflower rice)
1 cup grilled chicken breast, sliced
1 cup sweet corn (fresh, frozen, or canned)
1/2 cup cherry tomatoes, halved
1/4 cup red onion, diced
1/4 cup cilantro, chopped
1 avocado, sliced
Lime wedges, for serving
Salt and pepper, to taste
For the Street Corn Dressing:
1/4 cup Greek yogurt (or sour cream)
1 tablespoon mayonnaise
1 tablespoon lime juice
1/2 teaspoon chili powder
1/4 teaspoon garlic powder
Salt, to taste


Instructions

Step 1: Cook the rice according to package instructions. Fluff with a fork and set aside.
Step 2: Season the chicken breast generously with salt, pepper, and a squeeze of fresh lime juice.
Step 3: Grill the chicken on medium-high heat for about 6-7 minutes per side, or until fully cooked through and the internal temperature reaches 165°F (74°C). Remove from heat and let it rest for a few minutes before slicing into bite-sized pieces.
Step 4: In a small bowl, prepare the street corn dressing by combining the Greek yogurt, mayonnaise, lime juice, chili powder, garlic powder, and a pinch of salt. Stir until the mixture is smooth and well combined.
Step 5: To assemble the bowls, start with a base of cooked rice in two separate serving bowls. Top each with the sliced grilled chicken, sweet corn kernels, halved cherry tomatoes, diced red onion, and sliced avocado.
