Ingredients
200 grams cabbage, finely chopped
3 large eggs
1/2 onion, finely chopped
1/2 carrot, grated
1/4 cup chopped fresh spinach
1/4 cup oat flour
1/4 cup milk
1 teaspoon salt
1/2 teaspoon ground black pepper
Instructions
Step 1: Finely chop the cabbage and spinach, and grate the carrot and onion.
Step 2: In a large bowl, whisk the eggs until frothy, then stir in the milk and oat flour until no lumps remain.
Step 3: Fold in the chopped vegetables and season with salt and pepper, mixing until well combined.
Step 4: Heat a non-stick skillet over medium heat and pour a portion of the batter, spreading it thinly.
Step 5: Cook for 3-4 minutes per side until golden brown and firm enough to flip.
Step 6: Remove from heat and serve warm with your favorite healthy fillings.
Notes
Ensure the vegetables are finely chopped to maintain the structural integrity of the tortilla. Use certified gluten-free oat flour if necessary.
