Description
A naturally sweetened, fiber-rich granola with big clusters and a perfect crunch.
Ingredients
3 cups old-fashioned rolled oats
1 cup raw walnuts or pecans, chopped
1/2 cup raw pumpkin seeds
1/2 teaspoon fine sea salt
1/2 teaspoon ground cinnamon
1/2 cup melted coconut oil or extra-virgin olive oil
1/2 cup pure maple syrup or honey
1 teaspoon vanilla extract
1/2 cup dried cranberries (optional, added after baking)
Instructions
Step 1: Preheat your oven to 300°F (150°C) and line a large rimmed baking sheet with parchment paper to ensure your healthy granola recipe easy crunchy batch doesn't stick.
Step 2: In a large mixing bowl, combine the rolled oats, chopped nuts, pumpkin seeds, salt, and cinnamon. Stir well to distribute the spices.
Step 3: Pour the melted oil, maple syrup, and vanilla extract over the dry mixture. Stir until every oat and nut is thoroughly coated and glistening.
Step 4: Pour the mixture onto the prepared baking sheet and spread it into an even layer. Use a spatula to press the granola down firmly for better clusters.
Step 5: Bake for 25 to 30 minutes, or until the granola is lightly golden. If you want a healthy granola recipe easy crunchy and chunky result, do not stir during baking.
Step 6: Let the granola cool completely on the baking sheet (about 45 minutes). This is vital for the healthy granola recipe easy crunchy texture to set.
Step 7: Once cool, break the granola into clusters. Mix in the dried fruit if using, and store in an airtight container.
Notes
Always let the granola cool completely before touching it to ensure the best crunch.
