A nutrient-dense, spiced muffin packed with carrots, apples, walnuts, and coconut for a healthy start.
Ingredients
1/2 cup raisins
2 cups whole wheat flour
1 cup light brown sugar, packed
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon ginger
1/2 teaspoon kosher salt
2 cups finely grated carrots (about 8 medium)
1 cup grated Granny Smith apple (about 1 large)
1/2 cup shredded coconut
1/2 cup chopped walnuts
3 large eggs, room temperature
1/3 cup vegetable oil
2 teaspoons vanilla extract
1 teaspoon orange zest
1/4 cup orange juice
Instructions
Step 1: Preheat oven to 375°F (190°C) and grease or line a 12-cup muffin tin.
Step 2: In a large bowl, whisk together the flour, brown sugar, baking soda, cinnamon, ginger, and salt.
Step 3: Stir in the grated carrots, apple, coconut, raisins, and walnuts.
Step 4: In another bowl, whisk eggs, oil, vanilla, orange zest, and juice.
Step 5: Fold the wet ingredients into the dry mixture until just combined.
Step 6: Scoop batter into the tin and bake for 20-25 minutes until a toothpick comes out clean.
Step 7: Cool in the pan for 5 minutes, then move to a wire rack.
Notes
Ensure you squeeze the moisture out of the carrots and apples for the best texture. You can use unsweetened coconut to reduce sugar content.
