Ingredients
1 cup plain Greek yogurt (full-fat or 2% for creamier results)
1/2 cup creamy peanut butter
1/4 cup unsweetened cocoa powder
1/4 cup maple syrup or honey (adjust to taste)
1 teaspoon vanilla extract
Pinch of salt
2 tablespoons mini chocolate chips (optional, for topping)
Instructions
Step 1: In a medium bowl, combine the Greek yogurt, creamy peanut butter, unsweetened cocoa powder, maple syrup (or honey), vanilla extract, and a pinch of salt.
Step 2: Whisk vigorously until the mixture is completely smooth and no streaks of cocoa powder or peanut butter remain. The consistency should be thick and mousse-like.
Step 3: Line a small baking sheet or a plate with parchment paper. Using a small spoon or a piping bag, dollop 12-15 bite-sized mounds of the mousse onto the prepared surface. Alternatively, you can spoon the mixture into mini muffin liners.
Step 4: If desired, sprinkle the tops of each mousse bite with mini chocolate chips.
Step 5: Place the baking sheet or plate in the refrigerator and chill for at least 1 hour, or until the bites are firm enough to handle and hold their shape. This allows the flavors to meld and the mousse to set perfectly.

Notes
For a richer flavor, use full-fat Greek yogurt. If you prefer a firmer bite, you can place them in the freezer for about 30 minutes instead of chilling in the fridge. Feel free to experiment with other toppings like chopped nuts, shredded coconut, or a drizzle of melted dark chocolate.
