Description

A robust and comforting casserole featuring a savory ground beef base, sweet corn, hearty beans, and a crispy, cheesy tater tot topping.


Ingredients

1.5 lbs ground beef
1 medium onion, chopped
1 (15 ounce) can corn, drained
1 (15 ounce) can black beans, rinsed and drained
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup milk
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and freshly ground black pepper to taste
1 (16 ounce) bag frozen tater tots
2 cups shredded cheddar cheese


Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
Step 2: In a large skillet, cook the ground beef and chopped onion over medium-high heat until the beef is browned and the onion is tender. Drain off any excess grease.
Step 3: Stir in the drained corn, rinsed black beans, cream of mushroom soup, milk, chili powder, and cumin. Season with salt and pepper to taste. Bring the mixture to a simmer and cook for 2-3 minutes.
Step 4: Pour the beef mixture into the prepared baking dish, spreading it evenly across the bottom.
Step 5: Arrange the frozen tater tots in a single layer over the beef mixture.
Step 6: Bake for 20-25 minutes, or until the tater tots are golden brown and crispy.
Step 7: Remove the casserole from the oven and sprinkle the shredded cheddar cheese evenly over the tater tots.
Step 8: Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly. Let stand for 5 minutes before serving.

Notes

For an extra kick, add a pinch of red pepper flakes to the beef mixture. You can also mix in a can of diced green chilies for a bit more flavor. Serve with a side salad for a complete meal.
