Ingredients
1.5 lbs ground beef (80/20 lean)
1 large yellow onion, diced
3 cloves garlic, minced
1 (15-ounce) can corn, drained
1 (15-ounce) can black beans, rinsed and drained
1 (10.5-ounce) can cream of mushroom soup
1 cup shredded sharp cheddar cheese, divided
2 tsp chili powder
1 tsp ground cumin
1/2 tsp salt (or to taste)
1/4 tsp black pepper (or to taste)
3 cups prepared mashed potatoes (homemade or store-bought)
Instructions
Step 1: In a large skillet, brown the ground beef and diced onion over medium-high heat until no pink remains. Add the minced garlic and cook for 1 minute more until fragrant. Drain any excess fat.
Step 2: Transfer the browned beef mixture to the slow cooker. Stir in the drained corn, rinsed black beans, cream of mushroom soup, 1/2 cup of the shredded cheddar cheese, chili powder, cumin, salt, and pepper. Mix well to combine.
Step 3: Cover and cook on LOW for 4-6 hours, or on HIGH for 2-3 hours, until the mixture is bubbly and thoroughly heated.
Step 4: Once the base is cooked, carefully spread the prepared mashed potatoes evenly over the beef mixture in the slow cooker. Sprinkle the remaining 1/2 cup shredded cheddar cheese over the mashed potatoes.
Step 5: Cover again and continue to cook on HIGH for an additional 30-60 minutes, or until the cheese is melted and bubbly and the mashed potatoes are heated through.
