  • ½ cup cherry tomatoes, halved
  • ¼ cup diced cucumber
  • ¼ cup diced red onion
  • ¼ cup crumbled feta cheese
  • ¼ cup olive oil (for dressing)
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • ½ tsp salt (for dressing)
  • ¼ tsp black pepper (for dressing)
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh chives
  • Fresh parsley leaves (optional, for garnish)
  • Lemon wedges (optional, for garnish)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss potato fries with olive oil, salt, black pepper, dried rosemary, and dried thyme. Spread on baking sheet.
  3. Bake 25-30 minutes until golden and crispy.
  4. Combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese in a large bowl.
  5. Whisk olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper until smooth and creamy.
  6. Toss garden salad with dressing and serve alongside herb-roasted fries.
  7. Garnish with chopped fresh parsley, chopped fresh chives, fresh parsley leaves, and lemon wedges if desired.
