- ¼ cup diced red onion

- 1 tsp Dijon mustard

Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss potato fries with olive oil, salt, black pepper, dried rosemary, and dried thyme. Spread on baking sheet.
- Bake 25-30 minutes until golden and crispy.
- Combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese in a large bowl.
- Whisk olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper until smooth and creamy.
- Toss garden salad with dressing and serve alongside herb-roasted fries.
- Garnish with chopped fresh parsley, chopped fresh chives, fresh parsley leaves, and lemon wedges if desired.
