Ingredients
1 cup cottage cheese
2 large eggs
1/4 cup almond flour
1/4 cup sweetener of choice
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1 cup mixed berries (fresh or frozen)
Instructions
Step 1: Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
Step 2: In a blender or food processor, combine the cottage cheese, eggs, almond flour, sweetener of choice, vanilla extract, and baking powder. Blend until completely smooth and no lumps of cottage cheese remain.
Step 3: Gently fold in the mixed berries into the cottage cheese mixture. Be careful not to overmix, as this can crush the berries.
Step 4: Spoon the mixture onto the prepared baking sheet, forming 8 individual "clouds" or flattened rounds. Leave some space between each as they will expand slightly.
Step 5: Bake for 25-30 minutes, or until the cloud bread is golden brown around the edges and set in the center. They should feel light and springy to the touch.
Step 6: Remove from the oven and let cool completely on the baking sheet before serving. This allows them to firm up.
Notes
For best results, ensure your cottage cheese is blended until completely smooth. Adjust the amount of sweetener to your preference. This cloud bread is excellent on its own or topped with a dollop of Greek yogurt for an extra protein boost!
