Ingredients
1 1/2 cups cottage cheese
1/4 cup unsweetened cocoa powder
3 tablespoons honey or maple syrup
1 teaspoon vanilla extract
1 pinch fine salt
Instructions
Step 1: Place the cottage cheese, cocoa powder, honey, vanilla, and salt into a blender or food processor.
Step 2: Blend on high speed for 60 seconds or until the mixture is completely smooth and no curds remain.
Step 3: Taste the mousse and add an extra tablespoon of sweetener if desired, then blend briefly to incorporate.
Step 4: Pour into serving dishes and refrigerate for at least 30 minutes before serving with optional toppings.
Notes
For the smoothest texture, ensure your cottage cheese is not too dry. If using a very thick brand, you may need a splash of milk.
