Ingredients
2 cups fresh blueberries
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup unsalted butter, softened
3/4 cup granulated sugar
1/2 cup light brown sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup whole milk
1 teaspoon lemon zest
Instructions
Step 1: Preheat your oven to 350°F and grease a 9-inch round cake pan thoroughly.
Step 2: Melt 1/4 cup of the butter and pour into the bottom of the pan, then sprinkle evenly with brown sugar.
Step 3: Arrange the blueberries in a single layer over the brown sugar mixture.
Step 4: In a medium bowl, whisk together flour, baking powder, and salt.
Step 5: In a separate large bowl, cream the remaining butter and granulated sugar until light, then beat in eggs, vanilla, and lemon zest.
Step 6: Alternately add the dry ingredients and milk to the wet ingredients, beginning and ending with the dry ingredients.
Step 7: Pour the batter over the blueberries and bake for 40-45 minutes or until golden brown.
Step 8: Cool for 10 minutes, then invert onto a serving plate.
