1/2 cup light corn syrup
1/2 cup water
1 packet Kool-Aid (any flavor)

1 tsp vanilla extract

Instructions

Step 1: In a medium saucepan, combine the granulated sugar, corn syrup, and water. Stir over medium heat until the sugar is completely dissolved.
Step 2: Insert a candy thermometer, ensuring it doesn't touch the bottom. Bring the mixture to a boil and cook without stirring until it reaches 260°F (hard-ball stage). Remove from heat immediately.
Step 3: Carefully stir in the Kool-Aid powder, butter, vanilla extract, and salt until fully incorporated. The mixture will be very hot.
Step 4: Pour the hot taffy mixture onto a generously greased baking sheet or silicone mat. Let it cool for about 5 minutes, or until it's warm enough to handle comfortably but not scalding.
Step 5: Generously butter your hands. Begin to stretch and pull the taffy, folding it over itself repeatedly for 10-15 minutes. As you pull, it will become opaque, lighter in color, and firmer. This process incorporates air and creates the chewy texture.
Step 6: Once the taffy is firm and shiny, roll it into a long rope, about 1/2 inch thick. Use a sharp, buttered knife or kitchen scissors to cut the rope into bite-sized pieces.
Step 7: Wrap each individual piece of taffy in wax paper or parchment paper to prevent sticking. Allow the wrapped taffy to cool completely at room temperature before serving.
