Ingredients
3 tablespoons unsalted butter
4-5 cloves garlic, minced (about 1.5-2 tablespoons)
3 tablespoons all-purpose flour
1 ½ cups whole milk
½ cup grated Parmesan cheese
½ teaspoon salt
¼ teaspoon black pepper
Pinch of ground nutmeg
Instructions
Step 1: In a medium saucepan, melt the unsalted butter over medium heat.
Step 2: Add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to brown the garlic, as it can become bitter.
Step 3: Whisk in the all-purpose flour and cook for 1-2 minutes, stirring constantly, to create a smooth roux. This helps cook out the raw flour taste.
Step 4: Gradually pour in the whole milk, whisking continuously to prevent lumps. Continue to whisk until the sauce begins to thicken.
Step 5: Bring the sauce to a gentle simmer and cook for 3-5 minutes, continuing to whisk occasionally, until it reaches your desired consistency. It should be thick enough to coat the back of a spoon.
Step 6: Remove the saucepan from the heat and stir in the grated Parmesan cheese, salt, black pepper, and ground nutmeg until the cheese is melted and fully incorporated.
Step 7: Taste the sauce and adjust seasonings as needed. Use immediately on your favorite pizza crust, or let cool before storing.
Notes
For an extra kick, add a pinch of red pepper flakes along with the garlic in Step 2. Using freshly grated Parmesan cheese makes a significant difference in both flavor and texture. If the sauce is too thick after cooling, whisk in a tablespoon of milk or water until it reaches the desired consistency.
