Description
A delicious, one-pan meal featuring crispy chicken thighs glazed in a sweet and zesty honey orange sauce.
Ingredients
12 oz long-grain white rice
8 bone-in chicken thighs
2 tablespoons olive oil
salt to taste
black pepper to taste
zest of 2 oranges
4 cloves garlic (minced)
1.5 tablespoons ginger (freshly grated)
12 fl oz orange juice
1 tablespoon honey
1/4 teaspoon red pepper flakes
1 handful parsley (freshly chopped)
Instructions
Step 1: Cook the 12 oz long-grain white rice in a medium saucepan according to the package instructions until fluffy.
Step 2: Pat the 8 chicken thighs dry and season both sides with salt and black pepper.
Step 3: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
Step 4: Sear the chicken skin-side down for 8 minutes until crispy and golden brown.
Step 5: Flip the chicken and cook for another 5 minutes, then remove from the skillet and set aside.
Step 6: In the same skillet, sauté the 4 cloves of minced garlic and 1.5 tablespoons of grated ginger for 1 minute.
Step 7: Add the orange zest, 12 fl oz orange juice, 1 tablespoon of honey, and 1/4 teaspoon of red pepper flakes to the skillet.
Step 8: Return the chicken to the skillet and simmer for 15 minutes, or until the sauce has thickened and the chicken is fully cooked.
Step 9: Serve the chicken over the rice and garnish with freshly chopped parsley.
Notes
Use fresh oranges for the best zest and juice flavor. Bone-in thighs are recommended for the juiciest results.
